Day One of Summer Camp 2017

Today we “traveled” to Vietnam for our first day of Art and Cooking Summer Camp. We have a big group this year, but they are fantastic group of kids.

Our menu today was salad rolls with peanut sauce, chicken bahn mi sandwiches and a fantastic tropical tapioca.

I like Bob’s Red Mill’s tapioca, but I did find some really fun multi-colored tapioca at Fubon. We mixed them together for the pudding pictured.

 

Tropical Tapioca

1/2 cup tapioca pearls
1 cup coconut milk
1 cup water
1/3 cup sugar
3 ripe bananas , peeled, sliced
1 tablespoon sesame seeds , toasted
1 mango or other seasonal fruit (or more bananas!)

  1. Soak the tapioca pearls in cold water for at least an hour prior cooking. They will swell to almost double in size, so check to keep the water level up.
  2. Drain well. Put in a big saucepan with 3 cups of water and bring to a boil. Lower the heat and cook for 10-15 minutes until the tapioca pearls are opaque and softened. Drain. Set aside.
  3. In a large saucepan over low heat, combine the coconut milk, water and sugar. Cook, stirring constantly, for 5 minutes or until the sugar dissolves.
  4. Add bananas to the saucepan and cook for another 5 minutes.
  5. Add the cooked tapioca pearls and gently stir to combine. Cook for another 2 minutes.
  6. Remove from the heat and set aside to cool and thicken.
  7. Spoon into individual bowls, sprinkle with sesame seeds and top with mango slices. Enjoy!

 

March 2017 Turnip the Heat Cooking Updates

I don’t know about you, but I am ready for a little bit less rain, snow and cold and a little more sunshine and cherry blossoms. I love March in Portland because the days start to get a bit longer and the flowers start to bloom.

Turnip is continuing to focus on customer created events. I am now booking for April, May, and June (but April is almost booked, so act fast!) Turnip the Heat Cooking will be partnering with Deena Raphael from Camp Colorwheel to offer another round of cooking and art camp.

Our hands-on, 5-day summer camp explores world cultures through art, food, games, folktales and music. Each day we will discover a new country. Colorful art and craft activities will be led by Camp Colorwheel; Joanna Sooper will help campers prepare and cook their own lunch and snacks inspired by the day’s global destination.

Camp runs 9am -3pm, Monday – Friday.

It is hard to believe, but summer camp time is around the corner! Turnip the Heat Cooking and Colorwheel Camp are putting on, if I say so myself, a fabulous camp!

Art and Cooking Around the World! Each day we will be cooking and creating art from different cultures. The camp runs 9am – 3pm each day, open to students 6-12 years old and will be held in NE Portland.
We are thrilled that the camp is sponsored by Whole Foods Market on Fremont!
Sessions are already filling up, (half full already!!) so act fast.

Camp Colorwheel and Turnip the Heat Cooking present: Art and Cooking Around the World.

We’ll have outdoor time to soak up the summer sunshine and learn new games played by children in other parts of the world.

This camp is sponsored by Whole Foods Market Fremont. Ingredients will be local and organic whenever possible.

The first week of Turnip the Heat Cooking and Whole Foods Market cooking camp is complete! It was a lot of fun! I am ready for a few days of family time before jumping back into teaching.

The next round of camps is full, BUT I do have some additional kids’ classes coming in July!

I will be at the Hollywood Farmer’s Market July 12th doing kid friendly cooking demos and handing out lots of yummy samples.

I will be at the Hollywood Farmers Market tomorrow morning making strawberry salsa and celebrating the market’s third annual Kids’ Day! Music, food, and FUN!
